After 4 months of calling and searching the web for canning jars, I finally found the ones I'd been looking for and ordered them today! There has been a canning shortage for about the last 6- 8 months. I guess so many people were home because of the pandemic, that they decided to try their hands at different things they were curious about and canning happened to be one of them. OK amateurs, the country is slowly starting to open back up. so go back to doing your daily routine you had before house confinement and let us canners start making your favorite jams, pickles and chow-chow!

This season has been like no other!
In January 2020 I had lots of product left to sell from the previous year (2019) but few customers. Business was slow in early 2020. But in January 2021, the reverse is true. I am completely out of product, (thanks to an amazing customer) but I already have several orders! AND, to top it all off, there is a jar shortage!!! Yes, a JAR SHORTAGE. It appears, since so many people are at home due to Covid-19, they have decided to try their hands at canning or candle making or some other skill that requires 4oz, 8oz and 16oz jars. All of us in the canning business are feeling the jar scarce. Because I use locally & regionally grown, in-season produce, I am not feeling the jar pinch - yet. My supplier has assured me weekly (because that is how often I call them) that I will have my jar order filled within 6 weeks. I am counting the days!

Duncan Switch Street Market was suppose to have been the last selling event for Providence Preserves in 2020. Well all of that changed. Two days before the market, all of my products were sold to 3, yes 3, local customers in the DFW area. It was a pleasant surprise & a blessing all-in-one! We are completely out of product until spring of 2021. The Cedar Hill Market on Houston Street in Cedar Hill may still have a few of my products on the shelves, But if not, you will also find some other delicious goodies to satisfy your sweet tooth there.

Two black women, both from Elizabeth City NC, both related to me either directly or by marriage, influenced me in my canning journey, aka making preserves. One lady was a maternal aunt, Elsie Burke. Aunt Elsie was one of my mother's six sisters. She grew lots of veggies in her very large garden. What she didn't give away or freeze, she canned. As a young teen, I was privileged to watch her make amazing pickles, vegetables and fruit preserves but never allowed to assist. Today I make a sweet & spicy pickle in her honor. This pickle is only given to first cousins who can appreciate the story behind the pickles. Aunt Elsie was probably more spicy than sweet! All of my cousins and much of ECity can attest to that. The other lady was my mother-in-love Erma Roberts. Ma Roberts was also a canner. She made excellent Bread & Butter Pickles. Unlike Aunt Elsie, she allowed me to not only watch her but assist too. After I retired, Ma Roberts would assist me with making preserves. I could always count on her to help me prep for WHATEVER I was planning to can. I remember one summer day, I think in 2010, while we were peeling apples, our bowl of fruit slid across the table. We later learned it had been an earthquake. She and I decided a good name for that batch of cooked apples should be called "Earthquake Applesauce". It was some of the best applesauce I had ever made!
Both of these ladies loved the idea of me making preserves. They saw my canning as preserving a lost artform that they enjoyed doing. Aunt Elsie transitioned from this life in December 2010. My mother-in-love has now started her transitioning. I will always treasure their gift of preserving they imparted to me.

We'll have Southern Biscuit Mixes, Squash Pickles, Bread & Butter Pickles & Watermelon Rind Pickles all in half pint & pint sizes, You can also expect to see your favorite Jams and Chow-Chow available in 4oz gift box sizes.
